| As many may know, late harvest wines are made from grapes that have been left on the vine later into the season to allow the brix (sugar content) to more fully develop. These are generally classified as Porto, Sherry, Madeira, Marsala, Vermouth or simply Dessert Wines. We select the best creamy blue cheese that is a touch salty, (Roquefort); 4 year Aged Gouda (all that toffee goodness is extraordinary); 3 year Aged Provolone (salty and slightly fruity) and European Mimolette (similar to cheddar but not as buttery). All of these cheeses have been selected for their balanced salt content to compliment the sugars in your aparatif.
